SPICY BUTTER CHICKEN

4 chicken leg quarters
1tsp curry powder
½ teaspoon black pepper
½ teaspoon garlic powder
1 teaspoon green spice
3ml salt
50g butter
How to :
Mix spices with butter and rub over the chicken pieces. Layer them on a baking dish add veges of your choice on the sides of the roasting pan. I added roman tomatoes and onion wedges. Bake at 200° for about 40 minutes. Reserve the juices for another flavourful meal.
Serve with mashed potatoes or rice
SIMPLE POTATO BAKE

4 large potatoes thinly sliced
1 cup grated cheese
1 packet royco bacon and cheeder sauce
Seasoning of your choice
Layer the potatoes on a baking dish
Season then and pour over the sauce (should be mixed with boiling water) and sprinkle cheese on top and bake at 180° for 35 minutes
HOMEMADE PINEAPPLE JUICE

1 large ripe pineapple peeled and sliced
1 ½ cup sugar
1 ½ cup cold water
300ml water
How to :
Juice the pineapple in a food processor and strain out the juice and set aside. Boil the sugar with 1 ½ cup water to make a simple syrup. Let the syrup cool down and add to the pineapple juice. Top with 300ml water and refrigerate. Serve chilled
Tip: you can use the same recipe by substituting pineapple with oranges or lemons for a citrus cooler.
