Twice baked potatoes


You will need :


1 onion diced

1 cheese griller/ bacon diced

Half green pepper

Spice of your choice

15ml margarine

10 ml coconut oil for frying

1tsp crushed garlic and ginger

Fresh thyme chopped to garnish

About a cup of Grated cheese


How to:


Thoroughly scrub the skin of potatoes and dry with kitchen towel. Place them in an oven proof tray and bake them for 40min. Remove from oven and core the centre to get a potion of potato. Leave the rest with skin on. Fry onion, garlic and green pepper until soft then add the diced cheese griller and the buttered mash potatoes with the spice.

Remove from heat and scoop the mixture into the rest of the potato shells. Sprinkle with cheese and the fresh thyme. Put them back in the oven and bake for about 20min. Serve with a salad and chicken breast.

#rookietip (parboil the potatoes before you bake them... They took longer to cook.


3 ingredients biscuits



You will need


125ml white sugar

500ml cake flour

250g baking margarine


Method:

cream sugar and margarine together using a food processor or a wooden spoon, gradually add the flour until mixture is blinded. Roll the dough on to a floured surface and cut into portion. Bake at 180° for 15min or until golden brown.

Chicken feet soup with Sour milk (Amasi) bread


For the soup you will need:


1kg Goldi chicken feet cleaned

2 carrots diced

1 onion chopped

1 half green pepper chopped

2 tbs coconut oil

1 cup whole lentils cooked

1 tsp crushed garlic and ginger

1 tsp tumeric

1/4 tsp cayenne pepper

3 sprigs of fresh thyme

1 chicken stock cube

1/2 packet brown onion soup

1 cup water


How to :


In a deep sauce pan fry the vegetables and add the spices, add the chicken feet and stir in the lentils. Lower the heat to medium and add the water and cook for about 15m then make a paste with the soup and allow to simmer for 3min.


For the bread

500g self raising flour

1/4 cup sugar

3ml salt

1 cup water

1 cup Amasi


How to :


Mix the dry ingredients and and add in Amasi to make thick dough for a cakey consistency add water. Transfer dough in a greased baking loaf pan, bake bread at 180 ° for 40 minutes.

This potion can serve 6 people
